Guide to Grilling the Perfect Burger, & 20+ Gourmet Burger Recipes

A burger off of a grill is the quintessential summer food, and perfect for outdoor summer weddings.

And although well-made burger is always satisfying, you may want some fancier options to serve to your wedding party.

So here at The Sunshine Bride we've gathered over 20 gourmet burger recipes, grilling tips & tricks, & some extra tips on how to feed a large party of guests.
How To Make the Best Burgers


Use beef with at least 15 to 20% fat. It will be juicer, and therefore more delicious. And if you can get to a butcher get course ground meat for better burgers.

Form patties around 3/4" thick & 6-8 oz in weight, & make small indentations

Form your patties well - right around a 3/4 inch thick is ideal and 6 to 8 oz. To keep it from swelling in the middle make small indentations in the centers. And don't mix in salt unless you're grilling immediately as it will extract moisture or the meat. Sprinkle each burger with salt right before it goes on the grill instead.

Let your burgers marinate by storing them in the fridge a few hours before grilling. Make sure to add a little olive oil to ground chicken or turkey to keep your burgers moist.

Start with a clean, well oiled grate. It will keep your burgers from sticking, & get you those perfect grill lines you're looking for.

You're looking to get the grill to a medium level of heat, & you'll want to close the lid to shorten cooking time & to keep burgers moist.

Don't flatten the burgers with the spatula so you don't lose the juices, & check the internal temperature by inserting the meat thermometer horizontally.

Following is a rough temperature guide from The Burger Lab for cooking ground meat, & according to the USDA, the minimum safe temperature for ground meat is 160° F (71° C) - or well done.

120°F (49°C) and below for rare (red/raw in the center)
130°F (54°C) for medium-rare (pink and warm)
140°F (60°C) for medium (totally pink, starting to dry out)
150°F (66°C) for medium-well (grayish-pink, significantly drier)
160°F (71°C) and above for well-done (completely gray, very little moisture)

How To Grill for a Party

Grilling for a large group is all about timing. You should make the patties and any sides like coleslaw, potato or macaroni salad the night before.

Around 45 minutes before guests arrive get your grill to a medium heat. When your guests arrive put the burgers on and cook as many burgers as you can well spaced at a time on each grill. If you're cooking sausages of any kind cook them first as they're higher in fat, and will hold heat longer.

Place the patties in aluminum tins in waves, cover, and either save to prepare all at once or place next to your rolls and toppings buffet style.

Check out your site a year ahead of time during the same time of day, day of the week, and month you plan on using the grills to make sure they'll be available.
